Pork has worked for me in the past found out about it from reading a local Gazet article from a local FL man who caught a Pacu using pork.

As for the hook: use a long shank hook so they can't bite through it

Don't give them much time when they bite, if the hook ends up in the mouth the line can easily fray on those teeth,2 or 3 seconds after they take the bait set the hook!
